Fall was here and now for some reason it's barely here in sunny Southern California, but I am forcing that autumn feeling regardless. The mornings and most evenings are chilly, so that is enough to sweat it out in a sweater and boots during the 80 weather during the day, ok?!
One of my most favorite things about fall (besides the fashion, the colors and the holidays...) is the food and the scents! My mom used to always bake us banana bread during fall and winter and I love making it myself, the smell filling our house. What is it about the smell of something like my beloved banana bread that will make any day that much better??
Now days, baking has turned into such a fun / messy activity that I LOVE on a whole new level. Baking our family favorites with Cove and creating our own memories in the kitchen is the best. He loves to help pour in the ingredients and taste test the mashed bananas! He is known for liking it off the counter tops guys. It is seriously life giving and fills me with joy to see his little face light up baking and licking everything.
A couple years ago, I wanted to just try and make the amazing bread a little lighter / healthier, so I started trying to substitute out some ingredients, like butter and sour cream. I am still always playing with it but here is my most recent version of my Mama's Banana Bread that knocks our socks off! Hope you and your family enjoy it as much as our does.
Mama's Healthier Banana Bread
- 1 stick of butter - I replace with 6 oz of coconut oil
- 1 Cup of sugar
- 2 eggs
- 1 1/2 Cups flour - I want to try replacing with oat flour (finely ground oats)
- 1 tsp baking soda
- 1 tsp salt
- 1 Cup mashed bananas - I usually use 3-4 brown bananas, the more wrotten the better.
- 1/2 Cup sour cream - I replace with vanilla Greek yogurt
- 1 tsp vanilla
- *add 2+ tbsp of chia seeds
- *top with chocolate chips if desired
Heat oven to 350 degrees. Mix all ingredients together and put in a greased loaf pan, this usually makes enough for one larger loaf pan or two smaller disposable tins. These can also be baked in cupcake tins and are a great on the go breakfast or snack! Top with chocolate chips if desired! Cook at 350 degrees for 45 minutes. Enjoy warm with a glass of cold milk or hot coffee!
